Preheat the oven to 375°F (190°C).
Prepare the baking dish with olive oil.
Place the cod fillets in the baking dish, season with salt and pepper.
In a saucepan, heat olive oil over medium heat and add garlic and ginger. Sauté for 2-3 minutes.
Add coconut milk, lemon juice, and lemon zest to the saucepan. Stir and bring to a simmer.
Pour the coconut lemon sauce over the cod fillets in the baking dish.
Bake for 20-25 minutes, or until the fish flakes easily with a fork.
Garnish with chopped cilantro before serving.
