Ingredients

  • 4 cod fillets 6 ounces each
  • 1 cup coconut milk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • Prepare the baking dish with olive oil.
  • Place the cod fillets in the baking dish, season with salt and pepper.
  • In a saucepan, heat olive oil over medium heat and add garlic and ginger. Sauté for 2-3 minutes.
