Pat steak bites dry with paper towels, then season generously with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer (work in batches if needed) and sear for 2–3 minutes per side, until browned to your liking. Remove from skillet and set aside.
Reduce heat to medium. Add 2 tablespoons butter to the skillet along with garlic, thyme, and rosemary. Sauté for 1 minute until fragrant.
Return steak bites to the skillet. Add remaining 2 tablespoons butter and toss until the steak is coated in garlic butter.
Remove from heat, garnish with parsley if desired, and serve immediately.
