Ingredients

  • 1 lb ground beef or ground turkey
  • 1/4 cup water
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved

  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sliced black olives
  • 1/2 cup diced red onion

  • 1/2 cup salsa or pico de gallo

Instructions

  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
  • Stir in taco seasoning and water. Simmer for 2–3 minutes until the mixture thickens. Remove from heat and let cool slightly.
  • In a large salad bowl, add lettuce, tomatoes, beans, corn, cheese, olives, onion, and avocado.
  • Top with the seasoned ground beef.
  • Just before serving, add crushed tortilla chips, sour cream, and salsa. Toss lightly to combine or serve layered.
