- 1 lb ground beef
- 1 onion diced
- 2 cloves garlic minced
- 1 can 14.5 oz diced tomatoes
- 1 can 15 oz mixed vegetables
- 2 cups cooked rice
- 1 cup shredded cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Preheat your oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat until fully cooked.
Add the diced onions and minced garlic to the skillet; sauté until onions are translucent.
Stir in the can of diced tomatoes and mixed vegetables; season with Italian seasoning, salt, and pepper.
Combine the beef mixture with the cooked rice in a large mixing bowl.
Transfer the mixture to a greased baking dish and spread evenly.
Top the casserole with shredded cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for 5-10 minutes before serving.
