Preheat your oven to 400°F (200°C) or heat oil in a deep fryer.
Prepare a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs combined with seasonings.
Season flour with garlic powder, onion powder, paprika, and cayenne pepper (if using).
Dredge each chicken strip first in the flour, shaking off any excess, then dip into the egg, and finally coat in the breadcrumb mixture.
If frying, carefully lower the breaded chicken sticks into the hot oil and cook until golden brown, about 4-5 minutes per side.
If baking, place coated chicken sticks on a greased baking sheet and spray lightly with cooking oil. Bake for 20-25 minutes until golden.
While the chicken is cooking, heat buffalo sauce in a small saucepan over medium heat until warmed through.
Once cooked, coat the chicken sticks in the warmed buffalo sauce and toss to evenly coat.
Serve with your choice of dip, like ranch or blue cheese dressing.
