- 4 large russet potatoes peeled
- 1 medium onion grated
- 2 large eggs beaten
- 1/4 cup all-purpose flour
- Salt and black pepper to taste
- Vegetable oil for frying

Grate the potatoes and onion into a large bowl.
Squeeze the grated mixture to remove excess moisture.
Add the eggs, flour, salt, and pepper to the bowl.
Heat a skillet over medium-high heat and add a generous amount of oil.
