Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add the egg, vanilla extract, and peppermint extract to the butter-sugar mixture, mixing until combined.
  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  • Gradually add the dry mixture to the wet mixture, mixing just until combined.
  • Fold in the chocolate chips until evenly distributed throughout the dough.
  • Using a cookie scoop or tablespoon, portion out the dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  • Once cooled, roll the cookies in confectioners' sugar until fully coated before serving.
