Preheat the oven to 325°F (163°C).
In a bowl, mix the graham cracker crumbs and melted butter until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
Add vanilla extract and eggs, one at a time, mixing well after each addition.
Pour the cream cheese mixture over the prepared crust and smooth the top.
Bake in the preheated oven for 50-60 minutes, or until set and lightly golden.
Remove from the oven and let cool to room temperature before refrigerating.
Once chilled for at least four hours, top with sliced strawberries and strawberry preserves.
Serve chilled by cutting into slices, and enjoy!
