Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
Slice each chicken breast horizontally to create a pocket. Stuff each with one slice of ham and one slice of Swiss cheese. Secure with toothpicks if needed.
In one bowl, mix flour, garlic powder, paprika, salt, and pepper. In a second bowl, add beaten eggs. In a third bowl, add breadcrumbs.
Coat each chicken breast first in flour mixture, then dip in eggs, and finally coat with breadcrumbs. Place in the prepared baking dish and drizzle with melted butter.
Bake for 25–30 minutes, or until chicken is golden and cooked through (internal temperature 165°F / 74°C).
While the chicken bakes, prepare the sauce. In a saucepan, melt butter over medium heat, whisk in flour, and cook for 1 minute. Slowly whisk in milk and cream until smooth. Add Parmesan cheese, Dijon mustard, salt, and pepper. Simmer until thick and creamy.
Remove chicken from the oven, discard toothpicks, and spoon creamy sauce over the top before serving.
