Ingredients

  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup breadcrumbs panko or regular
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  • Slice each chicken breast horizontally to create a pocket. Stuff each with one slice of ham and one slice of Swiss cheese. Secure with toothpicks if needed.
  • In one bowl, mix flour, garlic powder, paprika, salt, and pepper. In a second bowl, add beaten eggs. In a third bowl, add breadcrumbs.
  • Coat each chicken breast first in flour mixture, then dip in eggs, and finally coat with breadcrumbs. Place in the prepared baking dish and drizzle with melted butter.
  • Bake for 25–30 minutes, or until chicken is golden and cooked through (internal temperature 165°F / 74°C).
  • While the chicken bakes, prepare the sauce. In a saucepan, melt butter over medium heat, whisk in flour, and cook for 1 minute. Slowly whisk in milk and cream until smooth. Add Parmesan cheese, Dijon mustard, salt, and pepper. Simmer until thick and creamy.
  • Remove chicken from the oven, discard toothpicks, and spoon creamy sauce over the top before serving.
