Eyeball Pasta Salad — Smoky Heat in Every Bite

Eyeball Pasta Salad: Make Eyeball Pasta Salad with pantry staples, clear cues, and flexible swaps.

Ingredients

  • 12 oz rotini or bowtie pasta
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls ciliegine or bocconcini
  • 1/4 cup sliced black olives
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup Italian dressing store-bought or homemade
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning

Instructions

  • Cook pasta according to package directions until al dente. Drain, toss with olive oil, and let cool.
  • In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, and red onion.
  • To make “eyeballs,” place a mozzarella ball in the salad and top with a black olive slice (press lightly so it sticks).
  • Toss the salad with Italian dressing and Italian seasoning until well coated. Season with salt and black pepper to taste.
  • Garnish with fresh basil if desired, then chill in the refrigerator for at least 30 minutes before serving.
  • Serve cold and spooky for Halloween!
