Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes thoroughly.
Pierce each potato with a fork a few times.
Rub the potatoes with olive oil and sprinkle with salt.
Bake for 25-30 minutes or until tender.
Remove from the oven and allow to cool slightly.
Cut each potato in half and scoop out the insides.
In a bowl, mix the scooped potato, sour cream, cheese, bacon, green onions, salt, and pepper.
Spoon the filling back into the potato skins.
Sprinkle with extra cheese and paprika.
Return to the oven and bake for another 10-15 minutes.
Remove from the oven and let cool for a few minutes before serving.
