Ingredients

  • 12 small russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 2 green onions chopped
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Paprika for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes thoroughly.
  • Pierce each potato with a fork a few times.
  • Rub the potatoes with olive oil and sprinkle with salt.
  • Bake for 25-30 minutes or until tender.
  • Remove from the oven and allow to cool slightly.
  • Cut each potato in half and scoop out the insides.
  • In a bowl, mix the scooped potato, sour cream, cheese, bacon, green onions, salt, and pepper.
  • Spoon the filling back into the potato skins.
  • Sprinkle with extra cheese and paprika.
  • Return to the oven and bake for another 10-15 minutes.
  • Remove from the oven and let cool for a few minutes before serving.
