Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup marinara sauce

Instructions

  • Preheat your oven to 375°F (190°C).
  • Prepare the filling by combining ricotta, Parmesan, basil, parsley, garlic powder, salt, and pepper in a bowl.
  • Butterfly the chicken breasts by slicing them horizontally without cutting all the way through.
  • Stuff each chicken breast with the ricotta mixture, then roll them up and secure with toothpicks.
  • Heat olive oil in a skillet over medium heat and sear the chicken rolls for about 3-4 minutes on each side.
  • Transfer the seared chicken rolls to a baking dish and pour marinara sauce over them.
  • Bake in the preheated oven for 25–30 minutes until the chicken is cooked through.
  • Let the rolls rest for 5 minutes before serving.
