- 2 pounds boneless skinless chicken thighs
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons Italian seasoning
- 4 cloves garlic minced
- Salt and pepper to taste
- 2 cups fresh spinach chopped
Place chicken thighs in the crockpot and season with salt and pepper.
Add minced garlic and Italian seasoning to the chicken.
Pour chicken broth over the chicken and seasonings.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Once cooked, remove chicken and shred using two forks.
Stir in heavy cream, Parmesan cheese, and chopped spinach into the crockpot.
Return shredded chicken to the crockpot and stir well to combine.
Serve warm, garnished with additional Parmesan if desired.
