  • 2 pounds boneless skinless chicken thighs

  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • 4 cloves garlic minced
  • Salt and pepper to taste
  • 2 cups fresh spinach chopped

Instructions

  • Place chicken thighs in the crockpot and season with salt and pepper.
  • Add minced garlic and Italian seasoning to the chicken.
  • Pour chicken broth over the chicken and seasonings.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, remove chicken and shred using two forks.
  • Stir in heavy cream, Parmesan cheese, and chopped spinach into the crockpot.
  • Return shredded chicken to the crockpot and stir well to combine.
  • Serve warm, garnished with additional Parmesan if desired.
