Flavorful Garlic Shrimp Mofongo Recipe

- 3 large green plantains
- 1 cup garlic minced
- 1 pound medium shrimp peeled and deveined
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1 tablespoon fresh cilantro chopped
Peel and slice the plantains.
Heat olive oil in a large skillet over medium heat.
Fry the plantain slices until golden brown on both sides.
In the same skillet, add garlic and sauté until fragrant.
Add shrimp to the skillet and cook until pink and opaque.
