Ingredients

  • 2 medium zucchinis spiralized
  • 1 lb boneless skinless chicken breast, sliced
  • 4 cloves garlic minced
  • 1 bell pepper sliced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 1 tablespoon green onions chopped (for garnish)

Instructions

  • Prepare the zucchini noodles (zoodles) using a spiralizer or peeler.
  • Season the sliced chicken breast with salt and pepper.
  • Heat sesame oil in a large skillet or wok over medium-high heat.
  • Add the chicken to the skillet and sauté until lightly browned and cooked through, about 6-7 minutes.
  • Add minced garlic and sliced bell pepper to the pan, sauté for 2-3 minutes.
  • Toss in broccoli florets and soy sauce; stir fry for another 3-4 minutes until the broccoli is tender but still bright green.
  • Finally, add the zucchini noodles, tossing everything together and cooking for an additional 2-3 minutes.
