Prepare the zucchini noodles (zoodles) using a spiralizer or peeler.
Season the sliced chicken breast with salt and pepper.
Heat sesame oil in a large skillet or wok over medium-high heat.
Add the chicken to the skillet and sauté until lightly browned and cooked through, about 6-7 minutes.
Add minced garlic and sliced bell pepper to the pan, sauté for 2-3 minutes.
Toss in broccoli florets and soy sauce; stir fry for another 3-4 minutes until the broccoli is tender but still bright green.
Finally, add the zucchini noodles, tossing everything together and cooking for an additional 2-3 minutes.
Remove from heat and garnish with chopped green onions before serving.
