Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss cubed sweet potatoes with olive oil, salt, pepper, and smoked paprika. Spread evenly on the baking sheet and roast for 20 minutes.
While sweet potatoes roast, whisk together honey, soy sauce, and minced garlic in a small bowl.
Remove sweet potatoes from the oven, add sausage slices on top, and drizzle with the honey garlic mixture. Toss lightly to coat.
Return to the oven and bake for another 15–20 minutes, stirring once halfway through, until sweet potatoes are tender and sausage is caramelized.
Remove from the oven, garnish with fresh parsley, and serve warm.
