Cook the Sausage: In a large pot, heat olive oil over medium heat. Add beef sausage and cook until browned, breaking it up as it cooks. Remove and set aside.

Add Potatoes and Broth: Stir in diced potatoes, chicken broth, and 1 cup water. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until potatoes are fork-tender.
Add Sausage and Cream: Return the cooked sausage to the pot. Stir in the heavy cream and bring the soup back to a gentle simmer.
Add Greens: Add chopped spinach or kale and cook for another 2–3 minutes until wilted.
Season to Taste: Add salt, pepper, and optional red pepper flakes if you like a little heat.
