Ingredients

  • 1 medium butternut squash about 2-3 pounds
  • 3 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Carefully peel and seed the butternut squash.
  • Cut the squash into 1-inch cubes.
  • In a large bowl, combine the cubed squash, olive oil, brown sugar, cinnamon, salt, and pepper.
  • Spread the squash in a single layer on a baking sheet lined with parchment paper.
  • Roast the squash for about 25-30 minutes, or until tender and caramelized, flipping halfway through.
  • Remove from the oven and allow to cool slightly before serving.
