Ingredients

  • 1 pound ground beef
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 10.5 ounces diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup diced onions
  • 2 cloves garlic minced
  • 1 cup beef broth

Instructions

  • In a skillet, brown the ground beef over medium heat, breaking it apart with a spoon.
  • Add diced onions and minced garlic to the skillet, cooking until translucent.
  • In a slow cooker, combine the browned beef, onions, garlic, black beans, corn, diced tomatoes, and taco seasoning.
  • Pour beef broth over the mixture in the slow cooker, stirring gently to combine.
  • Cover the slow cooker and set on low for 6-8 hours or high for 3-4 hours.
  • In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top.
