Cook the ground beef in a large skillet over medium heat until browned, about 5-7 minutes.
Add the taco seasoning to the cooked beef, stirring until well combined.
Pour in the salsa and let the mixture simmer for about 5 minutes.
Remove the skillet from heat and stir in 1 cup of shredded cheddar cheese until melted.
Warm the tortillas in a dry skillet or microwave until pliable.
Mound the beef and cheese mixture in the center of each tortilla.
Add sour cream, green onions, and olives on top of the beef mixture.
Fold in the sides of the tortilla and roll it tightly from the bottom to enclose the filling.
Serve the wraps with extra sour cream and salsa for dipping.
