Ingredients

  • 6 large flour tortillas
  • 4 cups cooked bread cubes white or whole wheat
  • 1 cup onion diced
  • 1 cup celery diced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 2 cups chicken or vegetable broth
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, melt the butter over medium heat. Add the diced onion and celery, cooking until soft (about 5-7 minutes).
  • In a large mixing bowl, combine the cooked bread cubes, sautéed vegetables, dried sage, dried thyme, and a pinch of salt and pepper.
  • Pour in the chicken or vegetable broth gradually, mixing until the bread is well-moistened but not soggy.
  • Lay a tortilla flat and spoon a generous portion of stuffing onto the center. Sprinkle with cheese, then roll tightly from the bottom up.
  • Place the rolled tortillas seam-side down in a greased baking dish.
  • Bake in the preheated oven for 20-25 minutes until the roll-ups are golden and heated through.
  • Meanwhile, prepare the creamy gravy by combining heavy cream and some broth in a saucepan over medium heat, stirring until heated through. Season to taste.
