Lay a tortilla flat and spoon a generous portion of stuffing onto the center. Sprinkle with cheese, then roll tightly from the bottom up.
Place the rolled tortillas seam-side down in a greased baking dish.
Bake in the preheated oven for 20-25 minutes until the roll-ups are golden and heated through.
Meanwhile, prepare the creamy gravy by combining heavy cream and some broth in a saucepan over medium heat, stirring until heated through. Season to taste.
